Vegetable Salad

This homely dish is used as an ingredient in the much grander Parisian Salad.


  • Cooled diced, boiled white potatoes, carrots, beets, rutabagas, and green beans or peas

  • Mayonnaise Collee

  • A pinch of salt


15 minutes if everything is cut before you begin.

To prepare:

  1. Combine all the vegetables and toss lightly.

  2. Mix gently with Mayonnaise Collee, being careful that the beets do not turn everything pink.
