Mayonnaise Collee

This is used in a number of the fancy salads that we serve at the Twelfthnight Gala. It holds together and unmolds easily.


  • Some delicate, clear Aspic of a kind that complements the salad in which this is to be used.

  • Three times that quantity of good quality mayonnaise


About 5 minutes

To prepare:

  1. Combine one part of the Aspic with three parts of the Mayonnaise.

  2. Gently whisk it together and chill until used.
