North Plymouth Tortellini

This recipe has been enjoyed in North Plymouth since before the Great Depression.


1 recipe North Plymouth Pasta Dough

5 cloves garlic, crushed fine

4 C. ground pork,  cooked

tsp nutmeg

4 large eggs

C fresh-grated parmesan cheese

tsp salt



Floured board and rolling pin


Serving Ideas:

This recipe makes about 1  quarts of cooked tortellini.

Serve with North Plymouth Meat Sauce.






  1. Mix all ingredients well.
  2. Divide into three portions and freeze two of them.
  3. Roll the pasta out into a thin sheet. Cut to shape.
  4. Add 1 t. filling to each triangle and fold as shown above.
