3 Large eggs

2 C. flour

tsp. salt


Floured board and rolling pin

Serving Ideas:

Fill with North Plymouth Tortellini filling.

This recipe makes about 1  quarts of filled, cooked tortellini.





  1. Mix flour and salt in a bowl, and form into a pile on a floured board.  Make a well in the center of the pile, like a volcano

  2. Mix the three eggs well, then pour them into the well in the flour mixture.

  3. Push the flour mixture in onto the eggs, gradually working the mixture until it is smooth.

  4. Wrap until needed. This dough can be frozen.
